The goudas

Made to a traditional Dutch recipe and matured for at least four to six months before we cut them. Plain, cumin seed, or garlic and chive. Creamy, golden and made for the cheese board, the sandwich and the fondue pot. Our most decorated cheeses, including a Champion of Champions for the cumin seed in 2018.

Soft and white-rinded

Camembert and brie made from organic whole milk, starters, cultures and salt, then slowly matured in a humid room until the rind blooms and the centre softens. The brie took gold at the 2021 NZ Cheese Awards.

Blue, fresh and cooking

Kallarney Blue is a Roquefort-style creamy blue with a full flavour and a closed texture. Our mozzarella is fresh and hand-stretched, with that lovely stringy pull on a pizza. The halloumi keeps its shape and turns golden in the pan, and was named champion at the 2023 NZ Cheese Awards.

Wheels of organic cheese aging on timber shelves

How it’s made

Milk, cultures, salt and time

Our milk comes from a certified organic family farm nearby, from cows that eat grass and never grain. We use unhomogenised milk, and add only starters, cultures and salt. No artificial additives, no antibiotics, no growth hormones, no sprays. Then the wheels go onto timber shelves in the aging room and we wait. What you taste is time, not shortcuts.

There is a viewing window at the barn if you would like to watch. Tuesday and Wednesday are the best days to see cheese being made.
